Slow-Braised Garlic-Stuffed Chuck Roast

A tender, garlic-stuffed chuck roast slow-braised in the Ninja Foodi with potatoes, carrots, and Cajun seasoning. A rich, hearty, gluten-free comfort meal.

Ingredients
  

Roast
  • 2 chuck roasts 2½–3 lbs each
  • 18 –22 garlic cloves 9–11 per roast
  • 2 tbsp beef tallow or oil
  • Garlic powder
  • Onion powder
  • Cajun seasoning
Vegetables & Broth
  • 1 container Guidry’s onion bell pepper & celery mix
  • 2 lbs baby potatoes
  • 1 small bag petite carrots
  • 32 oz beef broth
  • Optional 1 gluten-free gravy packet

Method
 

  1. Prep the Roasts
  2. Cut small slits all over each roast and stuff with garlic cloves.
  3. Coat all sides with garlic powder, onion powder, and Cajun seasoning.
  4. Set Ninja Foodi to Sear/Sauté. Add tallow or oil and sear roasts on all sides. Remove and set aside.
  5. Add Guidry’s mix to the pot. Stir and scrape up browned bits.
  6. Pour in beef broth and return both roasts to the pot.
  7. Switch to Braise mode. Cover and cook for 4 hours.
  8. Add baby potatoes and carrots. Continue braising for 2 more hours, until fork-tender.
  9. Whisk in a gravy packet during the last 15–20 minutes for a thicker sauce.
  10. Spoon tender roast, vegetables, and broth into bowls. Serve hot.
