Mawmaw Ducie’s Houseboat Flapjacks

A fourth-generation Louisiana family recipe, these thin, crêpe-style flapjacks come from Mawmaw Ducie, who lived on a houseboat in Jeanerette. Simple ingredients, sweet rolled-up edges, and a whole lot of heritage in every bite.

Ingredients
  

  • 1 cup flour
  • 1 cup water
  • 1 egg
  • Optional: vanilla or vanilla bean
  • Sugar for serving

Method
 

  1. Whisk flour, water, egg, and vanilla together until smooth.
  2. Heat a non-stick skillet over medium heat and lightly spray with cooking spray.
  3. Pour a thin layer of batter into the pan, tilting to spread it out like a crêpe.
  4. Flip when bubbles form and the edges set; cook until lightly golden.
  5. Sprinkle with sugar, roll up, and serve warm.
