High-Protein Pasta-less Lasagna

This high-protein pasta-less lasagna is a low-carb, creamy, cheesy lasagna alternative made without noodles. Easy to prep, packed with protein, and baked in cozy individual servings — the perfect weeknight comfort meal.

Ingredients
  

  • ½ lb ground beef
  • ½ lb ground turkey
  • 1 jar or homemade batch spaghetti sauce
  • 1 container 16 oz cottage cheese
  • 1 cup freshly grated Parmesan cheese divided
  • 3 tbsp ricotta cheese
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella cheese

Method
 

Make the Sauce:
  1. Brown the ground beef and ground turkey together in a large skillet over medium heat. Drain any excess fat, then stir in your spaghetti sauce. Let it simmer for 10–15 minutes while you prepare the cheese mixture.
Blend the Cheese Filling:
  1. In a food processor, combine cottage cheese, ½ cup Parmesan, ricotta, and Italian seasoning. Blend until smooth and creamy. Set aside.
Assemble:
  1. Spoon a layer of your meat sauce into individual ramekins or a small baking dish.
  2. Add a generous scoop of the blended cheese mixture in the center.
  3. Top with more sauce, then finish with shredded mozzarella and the remaining Parmesan.
Bake:
  1. Place ramekins on a baking sheet and bake at 375°F (190°C) for about 20–25 minutes, or until golden brown and bubbly on top.
Serve & Enjoy:
  1. Let cool slightly before serving. Each ramekin is a rich, creamy, protein-packed lasagna—no noodles required!
