Method
- Prepare the Pan: Spray the bread pan and kneading paddle with nonstick cooking spray. Secure the pan in your Cuisinart Compact Automatic Bread Maker.
- Add Ingredients in Order: Layer buttermilk, butter, egg, vanilla, mashed bananas, salt, sugar, flour, baking soda, and baking powder. Sprinkle yeast on top — do not mix in.
- Add Nuts: Sprinkle chopped pecans across the top before closing the lid.
- Set Bread Maker: Program #6 (Gluten-Free), color: Medium, size: 1½-lb loaf. Press Start.
- Bake: The machine will mix, rise, and bake automatically. When prompted by the mid-cycle beep, remove the kneading paddle if desired.
- Cool: When finished, remove the loaf and cool completely on a wire rack. Loosely cover with plastic wrap to retain moisture.
