Gluten-Free Banana Bread

This Gluten-Free Banana Bread is tender, flavorful, and foolproof, made in the Cuisinart Compact Bread Maker with ripe bananas, vanilla bean, and pecans.

Ingredients
  

  • Nonstick cooking spray
  • ¼ cup buttermilk room temperature
  • cup unsalted butter cut into ½-inch pieces and softened
  • 1 large egg room temperature
  • 1 teaspoon vanilla bean or pure vanilla extract
  • 1 cup mashed ripe bananas about 2 medium
  • ½ teaspoon Celtic sea salt
  • cup Sugar in the Raw
  • 2 cups King Arthur Gluten-Free Flour
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon active dry yeast sprinkled on top of dry ingredients — do not let it touch liquid
  • ¼ cup chopped fresh pecans or walnuts

Method
 

  1. Prepare the Pan: Spray the bread pan and kneading paddle with nonstick cooking spray. Secure the pan in your Cuisinart Compact Automatic Bread Maker.
  2. Add Ingredients in Order: Layer buttermilk, butter, egg, vanilla, mashed bananas, salt, sugar, flour, baking soda, and baking powder. Sprinkle yeast on top — do not mix in.
  3. Add Nuts: Sprinkle chopped pecans across the top before closing the lid.
  4. Set Bread Maker: Program #6 (Gluten-Free), color: Medium, size: 1½-lb loaf. Press Start.
  5. Bake: The machine will mix, rise, and bake automatically. When prompted by the mid-cycle beep, remove the kneading paddle if desired.
  6. Cool: When finished, remove the loaf and cool completely on a wire rack. Loosely cover with plastic wrap to retain moisture.

Using real vanilla bean adds beautiful specks and a rich aroma.
Store in an airtight container up to 3 days, or freeze slices for later.
