Preheat the oven to 375°F.
Season the chicken. Generously season both sides of the boneless, skinless chicken thighs with Gator Dust seasoning.
Heat the bacon fat. In a Dutch oven, heat the bacon grease over medium-high heat until hot.
Sear the chicken. Add the chicken thighs to the hot bacon grease and sear on both sides until they have a deep golden, caramelized color. You are not cooking them all the way through yet, just building flavor. Remove the chicken from the Dutch oven and set aside.
Sauté the aromatics. Add the onions, garlic, and optional shallot to the same Dutch oven. Stir well, scraping up all the browned bits from the bottom of the pot.
Add the potatoes. Add the quartered red potatoes and stir to coat them in all that flavor.
Add the butter. Place one stick of butter into the Dutch oven and toss everything together as it begins to melt.
Add the chicken back. Place the seared chicken thighs back on top of the potatoes.
Bake. Cover the Dutch oven and bake at 375°F for 40 to 45 minutes, or until the potatoes are tender and the chicken is cooked through.
Serve. Spoon the chicken, potatoes, onions, and buttery pan juices over jasmine rice. Serve and enjoy.
