Easy Ground Beef Gyros (Quick 30-Minute Dinner Recipe)

These easy ground beef gyros cook seasoned beef and sautéed vegetables in a Ninja Foodi and serve them on warm pita with hummus, fresh cucumber, tomatoes, Kalamata olives, and tzatziki for a quick family dinner ready in 30 minutes.

Ingredients
  

The Ground Beef and Vegetables
  • 3 tbsp olive oil
  • 2 lbs ground beef
  • 4 tbsp Kinder's Greek Seasoning
  • Garlic powder to taste
  • Salt to taste
  • 2 yellow squash diced
  • 1 zucchini diced
  • 2 red onions diced
  • 2 tsp Kinder's Greek Seasoning
  • Small drizzle of olive oil if needed
The Fresh Cucumber Topping
  • 4 mini cucumbers diced
  • 1 handful cherry tomatoes halved or quartered
  • 1 handful Kalamata olives sliced or chopped
For Serving
  • Pita bread warmed
  • Hummus
  • Tzatziki sauce homemade or store-bought

Method
 

  1. Set the Ninja Foodi to Sear/Sauté on High. Add the olive oil and ground beef. Season with the Greek seasoning, garlic powder, and salt. Cook, breaking apart, until completely browned and cooked through.
  2. Transfer the cooked beef to a bowl and set aside. Leave the drippings in the pot.
  3. Add the diced yellow squash, zucchini, and red onion directly to the beef drippings. Season with 2 teaspoons of Greek seasoning and a small drizzle of olive oil if needed. Sauté just until slightly tender — you want them to still have a little bite. Don't overcook.
  4. Return the ground beef to the pot and stir to combine. Turn off the Ninja Foodi and cover to keep warm.
  5. While the filling stays warm combine the diced cucumbers, cherry tomatoes, and Kalamata olives in a small bowl. Stir and set aside.
  6. Warm the pita bread in a dry skillet or quickly over a gas burner until soft, warm, and flexible.
  7. Spread a generous layer of hummus over each warm pita. Add the beef and vegetable mixture then spoon the cucumber, tomato, and olive topping over. Drizzle generously with tzatziki, fold, and serve immediately.
