Crispy Boudin & Pepper Jack Egg Rolls

Ingredients
  

  • 2 links Manda Boudin casings removed
  • 1 8-ounce block pepper jack cheese, shredded
  • Egg roll wrappers I love the Melissa’s brand
  • Water for sealing
  • Oil for frying
  • Sweet chili glaze for dipping

Method
 

Prepare the Filling
  1. Remove the boudin from the casings and crumble it into a large bowl. Add the shredded pepper jack cheese and toss until evenly combined.
Assemble the Egg Rolls
  1. Lay an egg roll wrapper on a clean surface. Add a portion of the boudin and cheese mixture to the center.
  2. Fold and roll according to the package directions, sealing the edges with a small dab of water.
Fry
  1. Fry the egg rolls at 350°F for 5–7 minutes, or until golden brown and crispy.
Serve
  1. Drain on paper towels and serve hot with a sweet chili glaze for dipping.
